Hello and welcome to Abby’s in the Barn.  As you may or may not know Wallingford Farm has had a bakery in the barn for about 10 years now.  Charles has been kind enough to sublet this bakery to me and my hope is to grow it into something special.

Who am I?  My name is Paul Cote.  I grew up in Pennsylvania and attended college there.  Following college I moved to Colorado for awhile but returned to the East Coast because it was calling me back.  I landed in Maine – the way life should be. 

While in Colorado I performed as the Executive Chef for The Delaware Hotel located in Leadville which is 10,500 feet above sea level.  After 4 years the hotel was sold and I then moved to Boulder where I was the Accounts Manager for multiple corporate cafes in the Boulder area.  We provided the staff and food services for such accounts as Sun Microsystems, Lockheed Martin, Dow Chemical and many other big name companies.  When I moved to Maine I wanted a little less corporate stress and spent 4 years managing Anthony’s Food Shop in York.

With that out of the way, this brings us to the present.  My plan at Abby’s is simple and sweet.  Provide good food for great people.  Abby’s will be open at 8AM to serve coffee, fresh baked muffins, pastries and scones.  During the day I will be baking cookies, pies, brownies and other sweet treats.  As the lunch hour approaches Abby’s will be providing soups, award winning chili and a variety of grab and go items such as fresh sandwiches made on our own baked bread, pasta salads and slices of Maine blueberry pie.  You can take your eats out or enjoy them in our Garden Café complete with WIFI access.  Abby’s can also provide catering for your executive meetings, parties and weddings.

Stop by Abby’s and check out our fine selection of New England Cheeses, extensive Olive Bar and a variety of Great Goodies.  Don’t forget to pick up some treats for Man’s Best Friend.  Abby’s bakes all natural Dog Biscuits with 25% of its proceeds donated to the Animal Welfare Society of Kennebunk.
